Aligoté is a historical grape variety of Burgundy and is able to establish itself in all types of soil. Olivier Leflaive sources grapes from plots located in Puligny-Montrachet and Corpeau with an average age of 35+ years. At the winery 20% was fermented and matured in barrel to contribute a little roundness. 80% was fermented in tank to capture the freshness.
