Fermented slowly using natural yeasts in stainless steel, the wine is allowed to express its pure, delicate citrus and floral notes without interference. To build serious texture and mouthfeel, this Assyrtiko spends six months resting on its lees, with regular stirring (bâtonnage) adding a rich, complex weight to the mid-palate. By relying on gentle gravity flow in the cellar rather than aggressive pumping, the estate preserves the electric freshness and brilliant minerality that makes this pour so compelling.
