One of the world's most awarded rums, the Dictador 12 Year Old Icon Reserve, is a Solera system aged rum made from the fermentation of virgin sugar cane distilled partly in a copper alembic and partly in a steel continuous column, to achieve a signature medium bodied rum. It is aged using Dicatador’s unique take on the solera-style ageing system. This is a cascading process where younger rums are aged in oak casks and then blended with older rums. The aged rums are arranged in different flights with the oldest distilled rum on the lowest levels of the Solera. The younger rums are placed on the upper levels with the very youngest rums at the top. As the rum is pulled from the lowest barrels for bottling, the barrels are not fully emptied, and those barrels (about half full) are then topped up with rum from the levels just above. This marrying of old and new softens the fiery younger rum and provides the final blended rum with a refined smoothness and flavour not found in ordinary rums. The rum is rich amber in colour, with reddish tones. Complex and aromatic, it is intense with soft caramel, honey, dry seeds and lightly roasted coffee, which gives way to medium oak aromas.
