Made adopting biodynamic principles, the Morella 'Mezzanotte' Primitivo is made from a blend of Primitivo vines with an average age of 40 years. At the winery the Primitivo bunches are destemmed directly in small open fermenters then pressed in a hydraulic vertical press. Fermentation starts with indigenous yeasts only and the must matures in old oak barrels for 10 months. The wine is racked 2 or 3 times before bottling without filtration. This is a rich red wine that has a distinct ripe berry nose with aromas of blackberries, plums and a hint of pepper.
