To create this unique spirit, Forest Distillery have distilled Cheshire barley and oats with wild yeast and fresh spring water. This was then matured in oak below the Cat & Fiddle distillery before being blended with other selected whiskies. A final sumptuous stage of flavour was added by resting the blend in English Oak casks in the distillery's own cellars. The result is a distinctly smooth and bright whisky of the very highest quality. It has a delicate sweetness which is beautifully balanced by the English oak.
